I have an apple muffin recipe:
Muffin:
2 1/2 cups apples, peeled and chopped (about 6 medium apples)
2 cups flour
1/2 cup sugar
1 tsp baking powder
2 teaspoons cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup butter (1 stick) - I substitite applesause for butter
2 teaspoons vanilla

Streusel topping:
1/3 cup brown sugar
1 Tablespoon butter, room temperature
1 teaspoon cinnamon
1 Tablespoon flour
-combine all into crumbs and set aside

-mix flour, baking powder, baking soda, and salt in medium bowl
-in large bowl mix eggs, butter (or applesauce) sugar and vanilla
-stir apples into wet mixture and gradually add dry mixture to wet (batter will be thick)
-sprinkle streusel topping over muffins
bake at 350 for 20 minutes
