I like the make a swiss-type steak and serve it over a bed of rice.
or
add some cream soup and chicken (and a can of rotel if you like it)
or
add it into a soup as a filler
or
mix it into meatloaf
or
add some salsa and have mexican style rice as a side dish (**oh, the mexican rice is great with some chicken that's been marinated in honey, lime juice and some spices and then grilled. Lay the chicken on top of the rice and sprinkle & melt some cheese over the top. yumm-o)
or
just freeze the leftovers until you decide what you want to do. It thaws nicely.
