Gluten Free Rice Pancakes

1/2 cup brown rice flour
1/2 cup tapioca flour
2 tbs. potato starch
1/4 tsp xathan gum
1 tbs egg replacer
4 tsp baking powder
1/4 tsp salt
1/3 cup sugar
2 tbs oil (canola or soy)
1 tsp vanilla extract
1 1/3 cup water

Preheat a non-stick skillet over medium heat. Combine dry ingredients in a bowl. Pour water, vanilla, and oil into a blender, and add dry ingrediants. Blend until frothy. If mixing by hand wixk vigorously until frothy.

Pour silver dollar sized pancakes onto lightly oiled skillet. Cook until golden brown on both sides.

Makes 16 pancakes
