spring onion and sweetcorn soup

Guest
1 can of creamed corn
2 shallots (spring onion)
1/2 onion
3 cups of veggie stock
1 stick of celery chopped

Fry onion and celery
Add stock plus one cup of water
simmer
add corn
stir
add shallots

stir, salt and pepper to taste...

a nice meat free alternative to chicken and sweetcorn
