6 cups sliced baking apples
1 tbsp lemon juice
1/4 cup tapioca flour
1 tsp cinnamon
1/8 tsp nutmeg
2 tbsp sugar

pre heat oven to 400*F

combine dry ingredients in a small bowl. in a large bowl toss apples with lemon juice and add dry ingredients. Pour into a 8x8 baking dish. Cover with crisp topping (recipe below)and gently pat down. Place dish on to cookie sheet to catch spills and bake for 30 to 40 minutes. If toppping gets to brown, loosely cover with foil for last 10 minutes of baking.

Crisp topping

1/4 cup brown rice
1/4 cup potato starch
1/4 cup tapioca flour
1/4 cup sweet white rice flour
1/4 tsp xanthan gum
1/8 tsp salt
1/2 tsp cinnamon
1/2 cup brown sugar
2 tbsp margarine

combine dry ingredents in a bowl. Use a fork or pastry cutter to cut margarine into dry ingredients to form course crumbs. Pour on top of fruit filling and gently pat down.

I like oatmeal in my fruit crisps, could that be substituted for the brown rice and potato starch?
