What's for dinner?

It’s a new month so let’s have a new thread. We can leave February far behind and jump into spring!

For dinner tonight I’m making Chicken leg quarters braised in a tomatillo sauce with Brown rice and salad.
 
We are having good old roast chicken with new potatoes and veg, followed by cherry and apple crumble with custard. That will make the kids sleep well tonight!:):p
 
When I take Jon to physical therapy I am going to go by my favorite deli and pick up some smoked cheese and some deli meat. Im going to get some sub buns and just do sandwiches today. I do not feel like cooking.
 
Oh well, dinner didn't go as planned. Both boys wanted hot dogs, as Jake had swim squad, so didn't want a big meal! So I guess the roast chicken will now be for tomorrow.........
It's a real shame as was looking forward to cherry crumble and custard.....:)
 
I made a Big salad with roasted chicken strips, chic-peas, green olives with pimentos and fresh mushrooms. I used light ranch dressing with parmesan & romano cheese on top with black pepper. I'm starting to eat lighter for Spring! Cookie :)
 
I made up a batch of Jfains homemade ricotta cheese last night. It turned out soooo good.
Tonight I went off a Mama inspiration and made a Mushroom and Ricotta Pie. I tweaked a recipe from a 20 odd year old cookbook by Madeleine Kamman. I don't know if any one remembers Madelein Cooks from PBS back in the 80's?

I'm enjoying mushrooms this week. and no, I'm not hallucinating.
 
I am making Jon and mushroom mozerella pizza. I sauteed mushrooms in olive oil and butter with garlic, thyme, salt and pepper. I got some mozerella from my fav deli yesterday and some store bought pizza sauce. I have a pizza crust going in the bread machine right now.
 
Wed. dinner

I made General Tso's chicken stir fry.


One can of oriental vegetables, Fresh mushrooms, 2 Cups of white rice

Three Tablespoon of General Tso's sauce, 1 Tablespoon of soy-sauce

Three chicken Breasts, 3 fresh garlic cloves crushed, ( a touch of salt)

a teaspoon onion powder, little black pepper

* Cook on the stove, 3 breasts of chicken in olive oil spry, put a Tablespoon of General Tso's sauce on each of the breast let it cook, add crushed garlic, soy-sauce, onion powder, salt, black pepper. Add your oriental veggies, fresh mushrooms. *Cook slowly on stove until done.


*Side Dish was frozen chicken egg rolls Cookie :)
 
Tonight was cat-night at the vet's office...

...which is always a draining ordeal, so I did a Shrimp Po' Boy w/ a side of cole slaw at the Popeye's drive-thru.
 
I BBQ'ed a whole chicken on the rotisserie. I used my coffee themed rub and bbq sauce. I used an Americas test kitchen inspiration and actually put the rub under the skin right onto the meat too. They were right, doing it that way and then letting it sit for an hour before cooking it, replaces the need for a brine. I slow cooked the chicken for several hours, added coals to crank up the heat then basted the chicken with the sauce every couple minutes until the birds temp was in the area of 160*. While sitting covered with foil the temp went up to almost 170*. The chicken was very moist and no charred bbq sauce.
 
Last night we had garlic chicken sausages with braised lentils and arugula.

Tonight we are having seared scallops with brown rice risotto and roasted broccoli.
 
Today I think I will make a pot of chili. I want something I can taste.
Jon still has half of his mushroom pizza he is working on.

Well, tonight I baked cheesecakes for a Friday event: 3 of Maida Heatter's Brownie Cheesecakes w/ Oreo crust, and 3 Butter-Pecan Cheesecakes w/ a pecan-shortbread crust.

SO...

While baking, I ate MANY extra Oreos and Pecan-Shortbreads and by the time the issue of dinner came 'round- I WAS STUFFED!

I know, I know... BAD KEVIN!

SO...

While baking, I ate MANY extra Oreos and Pecan-Shortbreads and by the time the issue of dinner came 'round- I WAS STUFFED!

I know, I know... BAD KEVIN!

I remember the days of eating cake or cookies for dinner. That was before my doctor said the words "high cholesterol to me. :( Oh well.
 
Well all that prep cooking I did on Sunday has really paid off for me this week. I work 9-6 this week so not a lot of time to come home and cook a big meal from scratch so I Cooked up a pot of lentils, a pot of rice and I've been switching it up all week with the bag of broccoli and the bag of arugula I bought. You would be amazed how versitile you can get with just those ingredients. I just defrost various quick cooking meats in the fridge while I'm at work and then throw it together when I get home. Last night we ate the last of the rice. It was delicious. Tonight we will probably finish up the lentils.

I'm going to add curry spices to the lentils tonight then serve with seared venison medalions and carrot raita.
 
Roasted chicken for Jon. I had popcicles.
On the bright side since I have the flu I have lost three pounds lol.
 
I had a hand-full of leftover crumbled bleu to get rid of- along w/ a pair of Tyson mesquite chicken breasts, so I made a huge Cobb Salad- big enuf for supper at home tonight, plus a bit to bring in to work for my mid-night meal. A bed of greens, crumbled bleu cheese, grape 'maters, avacado, chix breast, bacon and poppyseed dressing.

I went to Aldi's and they don't usually carry pesto- but they had jars of it for an amazing $1.99 tonight! I bought 6 of them along w/ 4 Boboli pizza crusts. Friday Night I am going to a friend's for dinner (a date!) but Saturday I look forward to making a yummy pesto pizza!
 
Another Friday of Lent. I am running out of meatless ideas. My wife and I will probably have scallops tonight but the kids won't eat fish. I've made pizza, grilled cheese, mac n cheese, tomato soup, waffles and pancakes so far. Maybe I'll make a batch of perogies for tonight.
