Makes 14 toasts

3/4 cup finely chopped sweet onion
cup mayonnaise
14 slices crostini
1/4 cup grated Parmesan cheese
black pepper

Preheat broiler.

In small bowl, combine onion and mayonnaise; spread evenly on each crostini; sprinkle with Parmesan and pepper to taste.

Broil until topping is bubbling and lightly browned, 1 to 2 minutes - be careful not to burn.

Serve warm.

VARIATION: Add fresh minced garlic to the onion/mayo spread; substitute Asiago with Pecorino Romano or a blend of Provolone and Mozzarella.
