1 pound shrimp, cleaned, shelled and chopped fine
10 water chestnuts, chopped fine
1 tbsp cornstarch
1 tsp sherry
1/2 tsp sea salt
1 egg, beaten slightly
Mix all of the above ingredients together, and then form into balls. Fry in olive or canola oil until golden brown.
