Something new for Americans, but pretty typical for Russian festive dinner - it's Vinegret!
I hope you will like this appetizer that is good for you too due to the goodness of red beets.
Ingredients:
3 Potatoes
1 Medium beet
2 Carrots
3 Dill pickles
1/4 Lbs Sauerkraut
1/8 cup Olive oil
Salt to taste
Preparation:
Cook potatoes, carrots and beets in skin, let them cool down, then peel.
Cut in small cubes (about 1/4 inch) all cooked vegetables and pickles, put in mixing bowl.
Add sauerkraut and oil and mix. Taste if you need to add salt.
Serving suggestions:
Can be served with herring, and a shot of vodka.

Just eat it it with the fork.
Not only it's tasty, it's good for you because of goodness of red beets and absence of mayo, we use olive oil instead.

Boy, I tell ya, I love this kind of food, but my stomach hates me for it. It is the Sauerkraut and dill pickles that get me every time. It has basically ended my love affair with a lot of German and Russian foods. Perhaps the vodka is the secret?
