Scrambled Eggs For A Buffet
Preparation time: 10 minutes. Serves 6.
1 dozen eggs 1/2 + 1/8 teaspoon salt 1/8 teaspoon white pepper 3/4 cup milk 2 ounces butter (a 1/2 cube)
Combine all ingredients except butter in a large mixing bowl with a mixer or hand mixer until blended but not frothy Melt butter in a large skillet and sauce pan over medium-low heat When butter stops foaming, add the egg mixture Stir until the eggs are scrambled but still wet Place the eggs in a double boiler (or chafing dish if you have one) and cover to hold over very low heat until serving time Stir eggs and serve
