Lemon-Cranberry Cookies

I came across a rather unusual cookie recipe that includes lemon and cranberry, but I decided to give it a whirle. I got the recipe from livingthegourmet.blogspot.com

Much to my surprise, the cookies, while not overly sweet, have a robust and almost rustic taste to them. Here's the recipe ver batum,

2 cups all purpose flour
½ stick butter
1 cup sugar
½ cup chopped walnuts
¾ cup chopped cranberries
zest of 1 lemon
juice of 1 lemon
1 egg
½ cup applesauce
1 tsp vanilla extract
1 tsp Baking Soda
½ tsp ground cloves
powdered sugar

Preheat Oven to 350 degrees.

Combine flour, sugar, baking soda, chopped walnuts, and ground cloves in large mixing bowl.

In separate bowl combine egg, applesauce, lemon juice, vanilla, cranberries, lemon zest, and soft butter. Mix well with hand mixer.

Combine wet and dry ingredients and mix again well.

Spoon batter onto greased or non-stick pan.

Bake for about ten minutes.

Let cool and then dust with powdered sugar.

These cookies sound incredibly delicous. Thanks for posting. I adore cranberries and this is a nice addition to my recipes.

Just wanted to let you know that the recipe changed a little since I posted this, so don't worry, it's still the same recipe, and some of the new recipes that have been posted since also look pretty good.
