We made these this morning and they were *so* good!

INGREDIENTS:
1/4 cup coconut oil**, melted
1 egg
1 cup milk substitute (rice, soy, or almond milk)
1 cup shredded tart apple - you can finely chop it in a food processor to save time
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon ground cinnamon
1-2 tablespoon(s) white sugar

DIRECTIONS:
In a large bowl, combine coconut oil, egg, milk and apple. In a separate bowl, sift together flour, baking powder, cinnamon and sugar. Stir flour mixture into apple mixture, just until combined. Batter will be thick.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.


** Coconut oil is solid white but becomes liquid at 76 degrees (so if you rub your fingers on it it will melt). You can buy it in jars at the grocery store in the health food section, popcorn section, and/or baking oils section (placement depends on grocery store). It is a great butter substitute!
