Chocolate chips

With the holidays approaching many of us will be using chocolate chips - milk chocolate, semi-sweet, white, butterscotch - you name it - in many of our holiday recipes.

What are some of the things you make with chocolate chips??
 
Cannoli Filling

2 cups of ricotta cheese
1/4 cup of bitter sweet chocolate chips
1/2 cup of confectioners' sugar
1/4 teaspoon of vanilla
Dash cinnamon

Pass ricotta cheese through strainer. Add remaining ingredients and hand mix gently. Chill until ready to stuff cannoli shells. (Fills 6 shells.)
 
TOLL HOUSE BUNDT CAKE

2 3/4 c. flour
2 t. baking soda
1 t. salt
1 T. vinegar and enough milk to measure 1 c. (to make sour milk)
1 c. soft butter
1 c. brown sugar, firmly packed
1 T. vanilla extract
4 eggs
2 c. chocolate chips

In small bowl combine flour, salt and baking soda; set aside.

Place vinegar in a 1 cup measuring cup; fill with milk; set aside .

In a large mixing bowl combine butter, brown sugar and vanilla extract; beat till light and fluffy. Add eggs on low speed. Add flour mixture alternately with milk. Fold in the chocolate chips.

NUT TOPPING:
1/4 lb. soft butter
2 T. sugar
2/3 c. nuts, chopped

Spoon batter into pan and put on topping. Refrigerate for 30 minutes to 1 hour to set before baking. Bake at 375* F. for 50 minutes.

Thanks for posting your Cannoli filling Mama. Would you have a recipe for the shells too, and a suggestion for what could be used for the tube besides a store bought gadget?
I guess that when it comes to chocolate chips, besides the usual of cookies, cakes or brownies I usually use them for pancakes. I just use my basic buttermilk pancake batter, before I add the liquid I add two very ripe mashed bananas and chopped walnuts. I then add the liquid and then after I put a 1/4 cup of batter on the griddle I sprinkle on a small hand full of chocolate chips. With the same recipe, separating the eggs, beating the whites and folding them into the batter works well for waffles too.
 
several people on another forum use crepes for cannoli? Haven't tried it myself, but these are good cooks whose advice I have taken in the past with excellent results.

2 1/2 cups of all-purpose flour
1/2 cup of extra fine sugar
1/4 cup of dry, white wine
Pinch salt
1/4 teaspoon of cinnamon
2 tablespoons of honey
1 egg white

FILLING:
10 ounces of Ricotta cheese
1/2 cup of extra fine granulated sugar
1 teaspoon of vanilla
4 tablespoons of milk
2 tablespoons of chocolate chips

Place flour directly on large board or table. Make a well in the center of the flour; gently fill well with wet ingredients; wine, honey, sugar, salt, whole egg, egg white and cinnamon. Mix texture thoroughly until stiff. Shape into ball, wrap in plastic and chill for two hours. Working with one piece of dough at a time, roll out on lightly floured surface. Roll out thin. Cut dough into 4 inch squares. Wrap each square diagonally around metal or wooden cannoli form and fasten with egg white. Keep dry in oil until golden brown. Fry a few at a time. Cool slightly and remove from forms. Combine and beat together the Ricotta cheese, sugar and vanilla until smooth. Stir in milk. Add chocolate chips. Refrigerate until ready to use. Just before serving, fill cannoli shells with Ricotta filling and sprinkle shells with confectioners sugar. Shells may be stored for up to two months in an air tight, sealed container.
 
Love chocolate chips in cookies....my favorite is Double Crinkles...chocolate cookies with chocolate chips, rolled in powdered sugar.
 
Chocolate Crinkles

Ingredients:
4 ounces unsweetened chocolate
1/2 cup Crisco
2 teaspoons vanilla
4 large eggs, slightly beaten
2 cups flour
2 teaspoons baking powder
1 pinch of salt
6 ounces of semi-sweet chocolate chips
1 cup powdered sugar

Instructions:

1. Gradually melt chocolate and Crisco in the top of a double boiler. Cool in a large bowl.
2. Beat mixture until well blended. Add vanilla and eggs. Set aside.
3. Use a medium bowl to sift flour, salt, and baking powder. Stir together.
4. Add flour mixture to the chocolate. Stir in chocolate chips.Chill dough for 2 or more hours in the refrigerator.
5. Preheat oven to 375 degrees.
6. Pour powdered sugar onto a plate. Roll dough into small 1 inch balls. Roll the balls iin the sugar to coat well.
7. Place balls onto lightly greased cookie sheets. Leave 2 inches between the cookies as they will spread during baking.
8. Bake for 10 minutes. The cookies will become firm as they cool.
 
I love putting chocolate chips in my pancakes. The kids love them too. My favorite is a Star Dust Chocolate Pancake recipe.

Stardust Chocolate Pancakes



1 cup skim milk
1/4 cup egg white
2 Tablespoons margarine (no Sat Fat)
1 cup all purpose flour
1/3 cup unsweetened cocoa powder goes in with the flour
1/4 cup Splenda sugar substitute
1/2 tsp baking powder
1/2 tsp salt
TOPPINGS: cinnamon sugar, strawberry preserves or sliced fresh berries, Cool Whip Light


In a small bowl, combine milk, egg and butter; whisk until blended.
In another bowl, combine flour, cocoa powder, Splenda, baking soda and salt; mix well.
2.Add milk mixture; whisk just until dry ingredients are moistened (Batter will be slightly lumpy).
3.Heat griddle over medium heat until hot (Drops of water will sizzle, then evaporate).
4.Pour 8 pancakes, using 1/3 to 1/2 cup batter into griddle.
5.Cook 1-2 minutes or until batter is set around edges.
6.Carefully turn over pancake; cook 1-2 minutes or until pancakes are cooked through.
7.Repeat with remaining batter.
8.Sprinkle pancakes with powdered sugar; serve warm with desired toppings.
 
I see a lot of cooking experts these days replacing chocolate chips with expensive chocolate. Melting it for brownies, cakes cookies, puddings, fillings and icings. Instead of chips they go for the shavings.
I will stick with the chips and Kisses and cocoa. I will keep the families palates craving what we can afford.
A favorite around here that we have most often is pancakes that I mix mashed bananas into the batter and sprinkle chocolate chips over when they are griddlin.
Chocolate chip cookies are always a treat. I like to make over size chocolate chip cookies, put a scoop of icecream between 2 cookies and then roll them into the little chocolate chips.

'mashed' brings back great memories I may have to use a substitute my hubby is allergic to bananas - big time but he loves my chocolate covered pretzels. I went to a party and took chocolate covered pretzels as a gift the host a millionaire who owns many hotels counted his guests placed that amount on a serving dish and hid the remainder, later on in the week I was told by his wife that he refused to share with anyone, even her she had to find his secret place and it so happened that two of his guests heard about the pretzels went to his home and jokingly asked for a pretzel believe it he gave them one only to taste it was a big joke and conversation at our next party. He looked at me without a guilty look and said they were so good I was not sharing
 
I love chocolate covered pretzels too. If I was that boss. I would have just run off with the whole stash. No one would have seen me again until they were finished off.

I love choc-dipt pretzels as well! In Anchorage there is a huge, fun candy factory/store called "Alaska Wildberry Chocolates". In their beautiful candy case they sell chocolate-dipt everything! From jumbo dipt marshmallows, graham crackers and truffles- to the hugest choc-dipt dried apricots and dried peaches I've ever seen! They also dip thick fresh orange slices (rind and all) into chocolate... SO delicious!
