I used to make this recipe on a camp fire, but does well in the oven too. If cooking on the camp fire, wrap everything very well with thick aluminum foil and cook for 2 to 3 hours on the coals, turning to cook everything evenly well.

4 thick slices of bacon
1 large onion, sliced
4 thick loin pork chops
1/2 tsp salt
1/2 tsp white pepper
1/8 tsp Tabasco Sauce
2 pounds sauerkraut
2 cups beer or ale

To cook at home
Fry out the bacon until cooked but not crisp. Remove the bacon to a 2 1/2 quart casserole. Saute onion slices in bacon fat until translucent. Add half of the sauerkraut to the casserole, and top with the onion slices. Brown pork chops on both side in a non stick frying pan.

Place the pork chops on the onions just placed in the casserole. Cover the pork chops wtih the remaining sauerkraut. Add beer, and the salt, Tabasco Sauce & pepper cover, and bake at 350 degrees for 1 and a half hours.

To make at a campsite:
Make a tray out of heavy foil. Place 1/2 of the sauerkraut in the foil, top with chops, and uncooked bacon. Top that with the onions and remaining sauerkraut. Add seasonings, including the Tabasco and beer.

Wrap tightly in several layers of heavy duty aluminum foil, and place by the side of a campfire over the coal. Flip often and cook for 2 to 3 hours.
