Potato Casserole

Ingredients

1 tsp. salt (optional), or to taste
1/4 tsp. pepper
1 Tbsp. all purpose flour
1/8 tsp. nutmeg
1 tsp. thyme, or 1 Tbs. fresh, chopped
1 Tbsp. unsalted butter
3 small onions\cooked, sliced
1 clove garlic, minced
4 baking potatoes, peeled and sliced
1/2 cup evaporated skim milk
1/4 tsp. paprika
aluminum foil
1/4 lb. shredded cheddar cheese



Instructions

Preheat oven to temperature 375°F. Combine first 5 ingredients in a bowl and set aside. Melt butter in a heavy nonstick skillet over medium heat. Sauté onions and garlic 5-7 minutes or until onions are softened. Layer potatoes and onions in a shallow baking dish, seasoning between layers with flour mixture. Pour milk over potatoes and sprinkle with paprika. Cover with foil and bake 50 minutes or until potatoes are tender. Remove foil, sprinkle with cheese and broil 1-2 minutes until cheese is melted.
