Oatmeal Raisin Muffins

Here's a healthy breakfast recipe for Oatmeal Raisin Muffins that was provided on the cooking forum by muffinman on July 03, 2006. High in fiber, low in fat and gets it's sweetness from a little brown sugar with natural honey. Note it uses only the egg white to cut out fat and healthy canola oil (a light olive oil ought to work too).

So instead of stopping at the dough nut shop on your way to work, make these in the morning. If you start by soaking the oatmeal and raisins in the buttermilk the night before there's only about 20 minutes preparation time in the morning and 20 - 25 minutes to bake. Actual baking time in my oven was 20 minutes.

Those look good! Those are one of my favorites. I love making muffins and now that fall is here I will be baking much more!

May I add a few tips about muffins?

Whisk dry ingredients in one bowl; combine wet ingredients in another bowl - folding your wet ingredients into your dry. You do not want to beat - you want lumps in your batter. You do not want a shiny batter. Even some spots of unloosened flour are okay! Leaving a few lumps in your batter will give you muffins that are more tender. Overmixing your batter develops the gluten in the flour and causes toughness and tunnels. Proper mixing will give you airholes that are evenly spaced and round - making your muffins light and fluffy.

Remember to never fill your muffin tins more than 2/3 full. This will give you the nice rounded tops you want. Too much batter in the cup will give you a flat top - there is not enough room in the cup for the batter to expand properly. If you don't have enough batter to fill all the muffin cups, fill the remaining cups with water - halfway - before baking. Empty muffin cups will warp and burn without the water in them.

I looked up Muffinman's recipe for oatmeal raisin muffins and they sound delicious. I will have to give them a try. I usually don't have enough time to make muffins before I go to work so I would have to make them the night before.

How well do the muffins come out if I were to pop them in the microwave for a few seconds to heat them back up? There is nothing like a warm muffin for breakfast.

The pictures that were taken of the muffins look so real I could almost reach in and try one.

You can reheat muffins in a microwave for that fresh taste! Just do them one at a time. If you do a bunch at once - you'll have to eat them all at once - re-reheating in the microwave after a while is kind of yucky!

Mama what did you mean when you said reheating in the microwave after a while is knid of yucky? Was this specific to the muffins or a comment about microwaving?
