ACINI DI PEPE SALAD
7oz. acini di pepe pasta, cooked, rinsed with cold water and drained
1 egg yolk
4oz. Sugar
1 Tbsp. all-purpose flour
6oz. Pineapple juice
4oz. Heavy whipping cream
1 pineapple, peeled, cored and diced
4 oranges, peeled, seeded and cut into sections
2 cups mini marshmallows
Combine egg, sugar, flour and juice in a pan over medium heat, stirring constantly until thick.
Remove from heat, let cool and whisk in cream.
Add to pasta and mix well.
Add remaining ingredients, mix and refrigerate.
