Low calorie because it mostly uses yogurt instead of mayonnaise.
- 4 medium potatoes, cooked, and diced
- 1/2 cup plain yogurt
- 2 tbsp mayonnaise
- 2 tbsp wine vinegar
- salt & while pepper to taste
- 1/2 tsp dry mustard
- 1/4 cup chopped celery
- 1/4 cup chopped green onion
- Combine the yogurt, mayonnaise, vinegar, and mix to blend well. Mix in the chopped green onion and celery.
- Season potatoes with salt, while pepper, and dry mustard.
- Carefully mix the yogurt into the potatoes.
- Chill for at least an hour or two before serving.
