Eggplant, Ham & Cheese Casserole in Clay Cooker

Ingredients:

FILLING:

1 large eggplant - thinly sliced
1/4 lb. French Brie or other soft, mild cheese - sliced
4 large stalks broccoli coarsley chopped
1/4 lb precooked ham - coarsley chopped
1/2 C crushed soda crackers
1/4 C freshly grated Parmesan cheese

SAUCE:

Ingredients:

1 8 oz. can tomato sauce
2 large cloves garlic - crushed
1 Tbls. olive oil
1/2 tsp. salt
3/4 tsp. dried oregano
3/4 tsp. dried Basil

Directions:

Presoak clay cooker - top and bottom - in water for 15 to 20 minutes
Brown thinly sliced eggplant in a frying pan with a little olive oil; set aside
In presoaked clay cooker place alternate layers of eggplant, ham, cheese, broccoli, cracker crumbs and 3/4 of the sauce, starting with the eggplant.
Top with remaining sauce and the Parmesan cheese.
Cover cooker and place in COLD oven.
Set oven temperature to 450 degrees and bake for 45 minutes.

Delicious served with crisp green salad or cole slaw. Enjoy:):)
