Soda Cracker Pie

This is a recipe I got from my mother-in-law shortly after my husband and I were married and it's become a family staple over the years. It's really fun!

Ingredients:
3 egg whites (save yolks for another use)
1C sugar
16 finely rolled soda crackers - saltines
1/4 tsp baking powder
1/2C chopped pecans
1 tsp. vanilla
Sliced fresh peaches

Directions:
Beat egg whites until stiff but not dry. Add sugar gradually, continuing to beat. Beat in soda cracker crumbs to which baking powder has been added. Stir in nuts. Spread in buttered 9" pie pan and bake at 325 degrees for 30 minutes. Cool and cover with layers of fresh peaches, sliced and top with fresh whipped cream.

This is absolutely yummy!! :D
