Dilled New Potatoes

2 tsp. fresh dill, chopped
1/4 cup oil (I use Canola)
3 Tbs. fresh lemon juice
2 Lbs. new potatoes, skins left on, thinly sliced

Preheat oven to 450° F. Combine first 3 ingredients in a bowl. Toss in potatoes and season with salt and pepper to taste. Transfer to a well oiled casserole pan and roast about 25 minutes, turning occasionally until golden. Serve immediately.

Yum, MsMai!

A more fattening version of this is to melt an amount of butter. Whisk in the same amount of sour cream (for instance, 1/2 c. melted butter and half cup of sour cream...)- then throw in as much fresh or dried dill as you like. Toss cooked, hot potatoes in this "sauce"- and boy, is it YUMMY!

Don't make me reach through this flatscreen and pinch ya', Chubbs.

You know dang well I am trying to lose an ounce or two :D

Your version sounds so marvelous. Thanks a bunch. Will make it after I have lost a few.

Glad you like the recipe too, Cathy.
