  • 4 carrots
  • 1 large onion
  • 2 celery stalks
  • 1/2 cup fresh mushrooms
  • 2 large tomatoes
  • 4 boneless skinless chicken breasts
  • 2 quarts chicken broth
  • 3 cups uncooked Basmati rice
  • 3 tsp lime juice
  • 3 tbsp cilantro leaves, chopped fine

Clean and chop the onion, celery, mushrooms, and tomatoes.
Cut the chicken into 1/2" cubes.
Add the chicken broth to a large saucepan, and bring to a boil.
Add the chicken cubes, and simmer for 1/2 hour.
Add carrots, and cook for 10 minutes.
Then add the mushrooms, tomatoes, onion, and celery. Cook for 15 minutes.
Add the cilantro, rice and lime juice. Cook for 8 minutes and then remove from heat.
Let sit for 10 minutes, and serve.
