Minestrone In Minutes
This is from the cookbook Nigella Express.

1 14oz can mixed beans or other canned beans
3 cups hot chicken or veg stock
1 cup tomato based pasta sauce of your choice
4 oz ditalini or other soup pasta

Drain the beans and put them in a pot with the hot stock and pasta sauce.
Bring the pot to a boil and add pasta. Cook according to package directions.
Once the pasta is tender switch off the heat and remoove the pan to a cool surface.
Let it stand 5-10 minutes then eat.

I made this early this morning. It was really good and easy.
I used some leftover Ragu spaghetti sauce. I had some homemade chicken stock and I added about half a cup of frozen veggies and a little fresh basil. I drizzled the top with some extra virgin olive oil and parm cheese. If your in the mood for soup and quick this is the recipe for you. I used a can of white beans in mine.
