Easter?

Do you guys make anything special?
Jon's Dad wants to make some burgers and hotdogs. We usually do that every year for Easter. Most of the time it is just Me, Jon, Jons Dad, Jons brother and his kids. His wife usually works. The two older grankids are to old to hunt Easter eggs now. The baby is to small. I was thinking I would make a batch of homemade chocolate ice cream. One of us is going to have to pick up a charcoal outdoor grill. Jon's Dad's is pretty much shot.
If I can find some fresh basil I would like to make that olive garden pasta salad recipe I posted. Olive Garden Pasta Salad Supremo.
 
For us it's always a big Italian dinner with lots of baking, homemade chocolates, etc. I wish we could depend on the weather and BBQ outside - but its still too cold and we still get snow past Easter at times.
 
For Easter I think I'm going to make Homemade Lasagna. I haven't made that for a long-time. I usually make manicotti with a meat sauce. I will make a caesar salad, and some garlic bread & wine to go with the lasagna.

for DESERT IT WILL BE CHOCOLATE!! I gave it up, and I have been really Good!

We usually have lots of folks over and go the big Sunday-Dinner route, and since my family doesn't eat lamb our tradition is to do up a big ham dinner complete w/ pineapple casserole, sour cream & dill potatos, asparagus, devilled eggs, the ever-present jello mold, clover leaf rolls and coconut layer-cake & lemon meringue pie. We also dye boiled eggs the night before, and decorate filled chocolate eggs w/ pastry-bags of colored icings... that's been my tradition w/ my niece & nephew since they were little...

I personally could easily opt for a yummy barbecue though, janie- I can do burgers & dogs ANY day of the year and be happy!
 
Jon's Dad wants to do a full blown dinner now. Invite his other sons inlaws and all so Ill be cooking for a lot. He still hasnt decided what the main dish is going to be. Told me he planned to make mashed potatoes and green beans. Ill probably make a pan of baked pasta and some breadsticks. I'll fix what ever meat he decides to get. Ill make something for dessert and what ever else he wants me to make.
 
Easter Dinner

I bought a spiral small ham for Easter the other day. I'm going to make my sweet potatoes to go with and my other side dish is Santa Cruz Seafood Shells. (post the recipe later on).

I changed my mind about just making Lasagna. We like Ham for Easter, but the desert will still be something chocolate, I think. Cookie :)
 
Cookie that sounds like a wonderful dinner.
Jon's Dad will wait til the last minute and spring on me what he wants me to cook.
Im going to Walmart tomorrow so I may just get a ham or something myself.
 
They have lamb on sale at carfagna's so DH has said we can do a leg of lamb for Easter! Normally he's not wild about lamb but maybe he is invisioning gyros with the left overs.

I hate not knowing what I am cooking til the last minute. Jon's Dad said yesterday he plans to get a hold of his other son's in laws and invite them. SOooo since he is doing that Im leaving the menu up to him. I told him to let me know if and what he would like me to cook to help. It may sound bad but when all of his other son's in laws come for dinner I kinda loose interest. I dont mind putting out a big dinner for Jon, FIL, BIL and his family but when you throw in all of his wifes family that I really don't know and have zero in common with it kinda takes the fun out of it for me. Christmas dinner they came and ate and then took every scrap of leftover food with them. They never brought anything to the dinner. I tossed around the idea of getting a ham or something myself at Walmart today but Im not going to. Jon can take ham or leave it and I canot eat it at all. I would just be buying it to cook for the others. Im just gonna wait and and let his Dad let me know what he wants me to make if anything. I think Im going to get a couple nice steaks at the store to make for dinner for Jon and I on Sat or Sun. I called my FIL yesterday and told him about a couple of sales they were having here in town on hams and even some pork loin and he was like well Im going wait a little while.. I like to know atleast a few days ahead so I can plan what Im preparing and get what I need from the store. I hate to wait til the last minute.
 
Easter will be here soon enough, you want to have a plan.

They know your a Good cook and they think puff, you can cook up anything quick, that's too stressful just ask them what they are thinking.

I changed my mind so many times what I was going to make for Easter & ham and the other stuff just seemed easy.

Well guys the FIL got a big tavern ham today and plans to get a turkey in the next few days. So I will be making the ham and the turkey. He wants me to make deviled eggs, 3 bean salad, cole slaw and some dessert. Tomorrow I'll go out and get cabbage, slaw dressing, eggs and the other things I need. I think Ill make glazed lemon cake for dessert. Jon asked for the lemon cake specifically. I plan to make a batch of the garlic cheddar biscuits to go with the ham.
Ill get the recipes gathered from my computer and put into one folder for quick access. Ill get my grocery list together tonight. I have to find my favorite ham glaze recipe and my fav turkey recipe. See what I need for those. I should already have most of that.
I took my brother to the store this morning and Walmart had strawberrries $1.50 a pint. They were wonderfully fresh. I got there right as she was putting out fresh ones. I got myself three pints and Jon's Dad three I gave to him.

My family did Brunch this past weekend to celebrate early, 'cause Dad & his wife are driving to her family up north for the weekend, and my sister will go to her in-laws, so I'll be by my lonesome for this- which is just fine! In fact, I like!
 
lol I went down to Jons Dads today and got the turkey and ham. He bought a 15 pound turkey yesterday and brought it home and put it into the freezer. I asked him why he put it into the freezer cause I needed it thawed to brine it before Sunday. As far as I know they are planning dinner for Sunday evening at 4. I picked up some plastic deli cups with lids to take some of my dishes in to cut back on how much tupperware I will have to take.
 
lol I love his Dad but he is set in his ways when it comes to how things are to be cooked. His obsession with cutting fat is a big drawback.
On Christmas he was trying to tell me how to cook dry pasta.
 
First he puts like a quart of water in a small pot to cook two pounds of pasta.
I said you need more water and a bigger pot. He doesnt get the bigger pot but adds more water. I had to catch his back turned to salt the water lol. I told him it was gonna stick together cause the pot was to small then he tells me ther reason the pasta sticks is cause I was cooking it to fast. I was like ugh..what ever you say lol. Never mind he had 2 pounds of spaghetti crammed into a 4 quart pot.
This is one of the reasons I cook the food here and pack it to his place lol.
