Limestone Salad

Hey Gang,

I'm away from home right now, on a visit to Vancouver, BC that included a funeral of a former co-worker earlier in the week... but now I'm having good times w/ friends on this dark, cold, rainy night. Our menu here at Bob's tonight includes warm stout loaves, caribou chili, rootbeer floats and parmesan/cayenne popcorn! YUM!

Just a quick check-in w/ a question while our gang takes a break from our movie-night... We're watching the CAMPY "Mommie Dearest" (I know... I know! Ha!) and Joan Crawford just ordered a black & blue Ny York Steak and a Limestone Salad.

Does anybody know what a "Limestone Salad" is? In all my years of fine-dining, before my camp cooking days, I never worked a menu that offered it... Not sure what it is at all.

Any ideas?

Kentucky Limestone Salad with Dressing

Kentucky Limestone Salad with Dressing

1 pound bib lettuce, washed & gently torn into pieces
1 recipe Kentucky Limestone Salad Dressing - below

Put lettuce in salad bowl and chill thoroughly. Pour dressing over lettuce and gently toss and blend well. Serves 4.

Dressing:

1 clove garlic, put through press or minced
1/4 teaspoon celery salt
About 1 teaspoon salt
1 teaspoon salad mustard
1/4 cup pear vinegar (other vinegar's may be used)
1/2 cup salad oil

Combine all ingredients and shake well in jar. Refrigerate at least 2 hours. Shake again just before pouring over lettuce.
