This Is My First Holiday Season Out Of Commercial Kitchens...

And I'm sufferin' withdrawals!

Holiday time in restaurants, country clubs, resorts and at remote site Alaskan oil camps were always special times. We worked our behinds off with all the fancy parties, buffets, brunches, banquets and catered affairs... we hardly had a free moment from Halloween to New Year's... but it sure was FUN helping others celebrate!

Now I'm building a second career, working a kinder/gentler corporate job. Yesterday was our holiday food-day and we all brought-in a dish to pass. There was some mighty fine grub! Cookie-trays, candy/fudge, turkey, ham, wild game, casseroles, cheeseballs, hot-dips, etc. I work 3rd shift so by the time I came in all the food had been wrapped-up and put away. It was fun raidin' the fridge though- felt like home!

Reminded me of when I cooked at a ritzy country club in Chicago's NW suburbs once- we were closed the day after every holiday buffet/brunch and that day was always called "Kitchen's Closed- So Come Raid the Walk-In" Day. We kitchen staff would always report to shift extra-early next day 'cause those pesky members really knew how to trash a kitchen! Lordy, high-falootin' well-to-do's could pick at a turkey carcass and lick a pie-tin clean like it was their last meal before the electric chair... Hee-Hee! smiles- k.
 
Been there - done that!

And the withdrawal kills you! When you are so devoted the first holiday is a real let-down.

And even if you live to be 150 - you will always miss it.
 
I put in my time at commercial kitchens as well! I'm wondering about True Refrigeration and whether that brand was much used in your commercial kitchen. I have the opportunity to buy a new one here and I want to do it right. Thanks for the post, I hope you enjoy your time away from the restaurant.
 
We had T-bones last week and I couldn't wait till everyone went into the den so I could "knaw a few bones."
