Well, this is quite late for your request but thought I would weigh in on this one also. I like to season things highly. other ideas for seasoning your chicken are sage, thyme, a little rosemary, garlic powder, and onion powder.
I like to roast my hen before using it in other reicpes. If you are using chicken breasts. I usually grill them or saute them in a little bit of olive oil. Here is a recipe for barbecue chicken tortilla pizzas. with some variations I have tried. Enjoy! Servings 16 Ingredients 2 flour tortillas 1 ½ cups chopped or shredded chicken or other meat ¼ cup barbecue sauce 2/3 cup chopped tomato, or bell pepper or what ever veggie you like 2 cups shredded Monterey Jack cheese 1 cup shredded cheddar cheese Sliced jalapenos, fresh diced or sliced tomatoes Directions 1. Heat grill to medium heat. Top each tortilla with about 2 to 4 tablespoons barbecue sauce, 1/3 cup of the chicken or other meat, and 1 cup total of the cheeses. 2. Place tortillas on grill. Cover and grill 6 to 8 minutes or until chicken is hot and cheese is melted. Remove from the grill and top with tomatoes. Cut each tortilla into 8 wedges. Serve with garnishes. Notes You can make these in the oven. I use a cookie sheet with a cake cooling rack on top. Then I preheat the oven to 425 and bake it until the cheese is melted and the tortilla is crispy and browned on the edges. I like to use my home made barbecue sauce. Have fun with this recipe, use pizza sauce and pepperoni, or brown some ground turkey and use a taco seasoning, shred lettuce and use taco sauce in place of pizza sauce, maybe green chiles, diced tomatoes and picante sauce, some sour cream and make a taco pizza.
