4 pounds chicken wings
4 cloves garlic, chopped 1-1/2 teaspoons cayenne 1/2 cup mayonnaise 1/4 pound blue cheese, crumbled 1 teaspoon vinegar 3 tablespoons cooking oil 1-3/4 teaspoon salt 1 bottle buffalo wing sauce (I use Wing Time) 1/4 cup sour cream 2 scallions, including green tops, chopped 8 ribs celery, cut into sticks Preheat oven to 425 degrees. In a large bowl combine chicken wings, oil, garlic, 1-1/2 teaspoon salt and the cayenne. Arrange the wings in a single layer on two large baking sheets. Bake until just done, about 25 minutes. Meanwhile, in a medium glass bowl, combine the mayonnaise, sour cream, blue cheese, scallions, vinegar, the remaining saalt and black pepper. Pour bottle of wing sauce in a large bowl, add the wings fresh from the oven and toss to coat. Serve wings with celery sticks and store bought blue-cheese dressing alongside. |
