Default Artichoke and Roasted Red Pepper Dip

INGREDIENTS:

* 2 tablespoons butter
* 1 leek, diced
* 2 (6.5 ounce) jars marinated artichoke hearts, drained and chopped
* 1 (7 ounce) jar roasted red peppers, drained and chopped
* 3/4 cup freshly grated Parmesan cheese
* 3 tablespoons mayonnaise

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).
2. Melt butter in a saucepan over medium heat. Saute diced leek until tender. Stir in the artichoke hearts, roasted red peppers, Parmesan cheese, and mayonnaise. Transfer to an 8x8 inch baking dish.
3. Bake for 30 minutes in the preheated oven, or until bubbly and lightly browned.

I have had artichoke dip and roasted red pepper dip that were both fabulous. Imagine what a dip with them both combined would taste like! I must try this, and soon.

I love roasted red pepper hummus, the spicy kick really gives it great flavor. I had not heard of adding leaks to a dip like this, what sort of flavor to leaks have? I love the combo of artichokes and the peppers together. Pita chips would be great with this!

Hmm I am so bad at describing flavors, but I know I like leeks. We have potatoe leek soup a lot and it's SO yummy. Yes pits chips would be great with this.
