Here's the stew recipe you were asking about Kaeli. I actually wouldn't really call it a recipe, as most of the things I make I do by eye. But here's a rough outline at any rate.


Ingredients:

Bean of choice, soaked overnight preferably. I used Navy beans (I think), the big white ones.

A nice chunk of smoked bacon.

3 to 4 cans of tomatoes, enough to cover all the ingredients basically.

Parsley (a whole plant).

Garlic (whole cloves, however many you want).

Salt and pepper to season.


To make, you pretty much just mix all the ingredients together and put into a nice deep clay pot with a lid (if you have one). Otherwise, use something else with a lid (which is important for retaining flavour...aluminum foil just doesn't cut it).

Bake at 225 celsius for about two hours, then turn down to 175 and continue to cook slowly for another three to four hours. Stir occasionally.
