Breakfast Ham And Sausage Ring

BREAKFAST HAM AND SAUSAGE RING
This make a nice breakfast presentation for a Sunday morning family breakfast. Serve with toast and jam, biscuits or cornbread!

10 eggs, divided
1 lb. ground, fully cooked ham
1 lb. bulk pork sausage OR breakfast sausage
1 1/2 cups soft bread crumbs
1/2 cup milk
2 tablespoons dried parsley flakes
1 tablespoon prepared horseradish - optional


Preheat oven to 350* F. Grease a 6-cup ring mold, set aside.

In large bowl, lightly beat 2 eggs; add ham, sausage, bread crumbs, milk, parsley and horseradish (if using); mix well.

Press into prepared mold; bake in preheated oven for 1 ¼ hours.

Just before the end of baking time, prepare scrambled eggs in skillet, seasoning as desired.

Remove ring from oven and drain juices from it; unmold onto serving plate; fill center with scrambled eggs.

Serve immediately.
 
Where can I get ground cooked ham? Do I grind it myself in the FP?
 
Yes - I grind mine in the food processor and it just takes a minute!

I use a good deli ham with no fat. And while I have the food processor out - I grind more ham, add minced onion, minced celery, chopped sweet pickle and mayo/salad dressing for ham salad. Great for sandwiches or as a spread for crackers.
