Honey-Pecan Crusted Chicken

1/4 teaspoon salt
1/4 teaspoon pepper
10 pieces of boneless, skinless chicken - breasts or thighs or mixed as you prefer
1/4 cup honey
2 tablespoons dijon mustard
3/4 teaspoon paprika
1/8 teaspoon garlic powder
1 1/4 cups finely crushed corn flakes (about 4 cups of uncrushed cereal)
1/2 cup finely chopped pecans

1. preheat oven to 400
2. Sprinkle salt and pepper evenly over chicken pieces and set them aside.
3. Combine the honey, mustard, paprika and garlic powder in a bowl big enough to dip the chicken pieces in and stir well. Combine the cornflakes and pecans in a shallow dish - like a pie pan or even in a baggie - which would make less mess.
4. Dip the chicken into the honey mixture and coat both sides (you could always brush this on with a pastry brush if you prefer) then roll til coated in the cornflakes/pecans.
5. Place chicken pieces on a large baking sheet (best to spray lightly with Pam first) and bake at 400 for 30 mins. Check for doneness. May need a slightly longer cooking time.

You can also use bone-in chicken pieces and adjust the time if you prefer...
