Cauliflower Au Gratin

CAULIFLOWER AU GRATIN

1 onion, thinly sliced
1 clove garlic, minced
1 t. olive oil
1 can (28 oz.) diced tomatoes, drained, reserving juice
½ t. Italian seasoning
¼ t. pepper
1 medium head cauliflower, cut into florets
½ c. Feta cheese, crumbled
½ c. Mozzarella cheese, shredded
¼ c. fresh parsley, chopped

Saute onion and garlic in olive oil until softened, about 3 minutes.

Add drained diced tomatoes, Italian seasonings and pepper. When bubbly, add cauliflower. Cook, covered and stirring occasionally, until cauliflower is almost cooked, 8 - 10 minutes.

Preheat broiler. Spoon mixture, including reserved juice, into an 8-inch baking dish. Sprinkle with feta and mozzarella. Broil until golden 6 - 8 minutes. Sprinkle parsley. Serve hot.
