Orange Muffins

1 cup flour
1/2 cup quick oats
3/4 cup light brown sugar
1 tsp baking powder
1 orange
1/3 cup orange juice
6 tbsp butter
1 egg
1/2 cup raisins
1/2 cup chopped pecans

  1. Preheat oven to 400 degrees F.
  2. Grease and flour muffin tins.
  3. Sift together the flour, and baking powder. Add the oats. Set aside,
  4. Grate the rind from the orange, and reserve.
  5. Discard pith, quarter and seed the orange.
  6. Place the rind, orange quarters, orange juice, sugar, butter and egg in a blender and mix together.
  7. Stir the flour and oat mixture into the flour mixture. Mix until combined.
  8. Gently stir the raisins and pecans into the batter.
  9. Fill muffin cups about 1/2 full with the batter, and bake for 15 to 20 minutes.
