What do you put in your eggs?

I recently started putting cheese and real bacon bits into scrambled eggs. The kids love it. I am looking to put different stuff into the eggs but not sure what would be good besides ham, sausage and bacon.

I like to put things in scrambled eggs as well - chopped onion or peppers (any kind of peppers!), chopped tomatoes, leftover diced pork, diced cooked potatoes (from leftover steamed taters), and leftover steak (you eat steak and eggs don't you??) I love to saute escarole in a bit of olive oil until wilted, scramble eggs and pour over (frittata) - it's been my favorite for years. You can also add sliced asparagus to your eggs. Try zucchini, red onion, red bell pepper and mozzarella sometime. Season with a bit of Italian seasoning or basi and marjoram. Have you ever topped your scrambled eggs with salsa, sour cream and green onions? Serve with heated tortilla shells. And don't forget mushrooms! Broccoli with scallions and Asiago cheese. Eggplant, squash, mushrooms, tomato and potatoes for another dish. Chicken, broccoli, mushrooms and tomato. Green chile, cottage cheese and Monterey Jack cheese. Chorizo, chiles, onion and serve with tortillas and mashed avocado and salsa. Spinach, sour cream and Parmesan. Add croutons with your bacon or ham. Add O'Brien frozen potatoes. Add pepperoni. Ricotta cheese, asparagus and Parmesan. Shrimp, onion, soy sauce. bean sprouts. Any cheese - Swiss, any Italian cheese, any Danish cheese, any Mexican cheese, etc. Add some evaporated milk or cream for a nice flavor. Smoked salmon and asparagus. Crab meat. Serve eggs with salsa or stewed tomatoes, Creole sauces, etc. Try BLT eggs - bacon, chopped lettuce and chopped tomatoes. You can do anything you want and season any way you want. I hope I gave you an idea or two. Give a holler if you need recipes.

Sometimes I put nothing, and other times I put chunks of ham, turkey, or other leftovers and cheese, onions, peppers and tomatoes. I live the teaste the combination brings, and it is a meal for me.

My fiance is really fussy so I just put a bit of cream, ham, onion and mushroom in my scrambled eggs with black pepper and chives. They always turn out nice and fluffy! :)

* Cook up some fresh or canned mushrooms with a little garlic, if desired.
* Cook some diced green peppers until tender, then add eggs
* Shred some sharp Cheddar cheese, and toss on cooked eggs.
* Diced some asparagus spears, cook in a skillet with a little oil for 3 to 4 minutes until just tender, then add eggs. Sprinkle with some shredded Monterey Jack cheese.
* Ham is widely used. We chop up DAK style ham into 3/4 - 1" square cubes, separate the pieces by spining them through our fingers, and then first warm them in a skillet and then add eggs and scramble. Add your favorite cheese (shredded or chunks), let melt, then serve. If you don't have non-stick skillets, then simply top with shredded cheese and let melt.
* Cook 1/2 cup of canned or fresh diced tomato until the water has evaporated, then add 3 scrambled eggs and cook until eggs are cooked through.
* Combine any of these to make different mixes and flavors.

I mix eggs with corned beef. My husband loves it. We like dipping it in catsup. This mixture is a good partner for ordinary rice or fried rice which in combination, makes a very delicious breakfast. You can also eat eggs and corned beef with a sliced bread and then put mayonnaise on it.

My mom loves to put chopped onions and tomatoes in eggs. I love to eat them with breads. She also put sliced hotdogs in eggs. It's very good too especially with breads. Diced potatoes mixed with scrambled eggs are very good too especially when dipped in ketchup. Also, eggs and eggplants. Eggs and ground pork with red bellpepper are very good too.

Peppers & Onions

I really like throwing in frozen peppers and onions, and sometimes other veggies, because it's quick & easy & healthy. Just buy the kind that are already chopped & throw a handful in before the eggs solidify. Easy...& you dont have to prep anything. Takes just a long as a bowl of cereal would, but w/o all the extra carbs, milk fat, or sugar.

I like to put in sausage bacon or cut up sandwich meat, tomatoes, onions, peppers, cheese. Yum! I'm getting hungry.

I have simple taste I think. I just love cheese in my eggs. I sometimes just don't like a lot of flavors mixed together.

I love lots of onion and tomatoes. That's it.

When I want to be a little fancy, I add bell pepper, milk and chese.
