I typically hate salad, but I gave this one a try when it was made for me a few months ago. It's actually a modified version of a recipe that is South Beach Diet friendly. All the ingredients in my version are still applicable to south beach or any other low carb diet plan.
Ingredients:
* One Romaine Heart chopped to bite size pieces
* One avocado chopped or mashed
* One can (6 oz.) water-packed tuna strained
Dressing:
* 2 tablespoons olive oil
* 2 tablespoons lime (or lemon) juice
* 1 teaspoon pre-minced garlic or 2 heads chopped garlic
I mix this all together in a bowl with just a fork or some tongs. Supposedly it feeds one. But it can easily be shared if other food is paired with it. It also tastes great with some warm spinach naan (Indian bread) wrapped around it. I don't know about that part being low-carb friendly of course. I also made it the other night with no romaine and it would be wonderful on toasted bread for a tuna salad sandwich. Kind of a nice alternative for me because I do not like mayo!
