HELP! Steak Fries by Paula

I recently saw an episode of Paula's Party and she did big thick crispy steak fries. Well, I'm wanting to do a variance on her recipe, but I can't find it! I think she fried the potatoes for a couple of minutes, let them cool, then dipped them in evaporated milk and then flour & seasoning. Does this sound right? Pre-fry for a couple of minute and then coat?
 
Paula Deen's Batter-Dipped French Fries


2 lbs russet potatoes
2 cups all-purpose flour
1 (6 ounce) can evaporated milk
oil (for frying)
salt and black pepper (to taste)


1. Heat oil to 325' in a deep fryer or a large deep pot, no more than half full.
2. Slice potatoes into wedges (peel or leave on potato skins).
3. Fry potatoes for 2 minutes and drain, allow to cool off.
4. Turn oil up to 360'.
5. In a bowl combine flour, salt and black pepper and set aside.
6. In another bowl add evaporated milk.
7. Dip cool potato fries in evaporated milk than into flour mixture.
8. Fry 5-10 mintues or until browned.
9. Drain on papertowel and enjoy.

Of course, that is why everything is so delicious.

LOL!!! I see you live in PA. I have been looking for a place there for the past year - I am going to relocate there sometime this year. Then I can adopt you and teach all I know!

Paula is the wrong person to watch if you're concerned about the fat. I think I gain weight just watching her on tv. Her favorite ingredient is butter and she doesn't skimp on it ANYWHERE!
 
You got to watch the fat .. a little bit here and there is okay but over time if you're eating fatty foods all of the time, you're probably going to have heart troubles. The trouble is the fat tastes good and that invites us to want to eat fatty foods. But like LOTS of things we have to do (like wanting to tell off your boss :) ), we have to resist that temptation and focus on more healthy foods.

I try to eat healthy 5 days a week, and stray for 2 meals on the other two days. If you've had family with health troubles then maybe 6 days a week of healthy eating (that's vegetables, whole foods like brown rice, whole wheat bread and pasta, and boneless chicken breasts) and 1 day [or less] of bad is better.
