4-5 cups zucchini (using small zucchinis, slice in half lengthwise in 1/4 in slices; boil for 5 min.

Mix:
1 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon- I prefer more
1/4 teaspoon nutmeg- I prefer more
1/4 teaspoon allspice- I prefer more
1 1/2 teaspoon cream tartar
2 or 3 Tablespoons cornstarch
pinch salt

Pour over drained zucchini, mix well. Turn into a pie shell, cover with top crust. Bake in 400 degree oven for 10 minutes. Turn oven down to 350 degrees for 20 minutes

it's really not too bad of a sub. :)

and as always, Mama has a great recipe :)

Whoa! I had never heard of this.
It actually sounds a bit frightening to me.
But if Mama Mangia says & she has a recipe I bet it would turn out good. :)

thank you for the compliment - but remember - we all have different tastes - and what one likes - another may not - and that is understandable

remember - you are dealing with a woman who love anchovies!!! and not too many people do! LOL
