Does anyone have a good recipe for blackened meat?

When I go out to eat at say, Applebees, and I order my chicken or steak blackened, it is delicious. I cannot seem to duplicate that blackened taste at home. The spices and herbs are terriffic. Does anyone know of a good recipe or brand of seasoning that tastes good?
 
BLACKENED CHICKEN

2 teaspoons paprika
1 teaspoon crushed dried thyme
1/2 teaspoon sugar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper
6 boneless, skinless chicken breast halves ; pounded to even thickness


Combine all seasonings; mix well. Sprinkle over chicken, coating completely. Heat large skillet (cast iron is best) over high heat until very hot. Working in batches if necessary, carefully place chicken in skillet and cook 3 to 4 minutes on each side, or until coating is blackened and chicken is no longer pink inside.
 
That's pretty much what I use, although I could swear my recipe had more paprika, like 2 TB at least.

I usually double or triple it and save the leftovers for another meal; it saves measuring and mixing all those spices every time.
 
It's all a matter of preference! There are times I add to this myself. There are many blackened spiceson the market too. I made a jar of the mix - then I can use it when I want.
