Gazpacho Soup Recipe

1 cup toasted breadcrumbs
46 ounce can V-8 juice
1/2 green pepper
1/2 cucumber
1 onion
garlic
1 tablespoon olive oil
1 tablespoon vinegar
1 tomato, diced
a few drops of Tabasco sauce
salt and pepper to taste

Mix breadcrumbs and 2 cups V-8 juice. Set aside. Dice and purée in blender the pepper cucumber, and onion. Blend in remaining ingredients. Add remaining V-8 juice, mixed with breadcrumb mixture. Serve chilled.

Serve bowls of chopped green pepper, cucumber, tomatoes, croûtons to be added individually to the soup. This is an excellent soup served in the summer along with Sangria wine and a hot cheese bread.
