Zucchini Bread Recipe

2 cups sifted all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup canola oil
1 1/2 cups sugar
2 medium sized zucchini - grated (about 2 cups)
2 teaspoons vanilla extract
1 cup raisins
1 cup chopped walnuts

Sift the flour, baking soda, salt, baking powder and cinnamon into one bowl. Combine eggs, canola oil, sugar, zucchini and vanilla in another bowl. Beat until well mixed. Stir in the flour mixture until smooth. Stir in raisins and nuts. Pour mixture into a greased 13 x 9 x 2 inch pan. Bake for one hour at 350°.
