Onion, Garlic, & Herb Sandwich Rolls

6 To 6 1/2 Cups Flour
2 Cups Milk
2 Large Eggs (at Room Temp)
2 Pkt's Rapid-rise Yeast
1 1/2 Tsp. Salt
5 Tbsp. Sugar
3/4 Stick Of Butter Or Margarine
Olive Oil
1 Onion Diced Fine
2 Tbsp. Minced Garlic
1/2 Tsp. Dried Thyme
1/2 Tsp. Dried Basil
1 Tsp. Dried Parsley
1/4 Tsp. Dried Italian Seasoning

Into A Large Mixing Bowl Sift 4 Cups Of The Flour, Salt, Sugar, And Yeast. Melt The 3/4 Stick Of Butter In A Sauce Pan Once Melted Add Milk And Turn Heat Off Allow Milk To Sit In Pan A Few Moments To Warm. Once Milk Is Slightly Warm Pour Into Bowl With Flour And Mix Well, Continue Mixing And Begin Adding Additional Flour Until You Have A Nice Dough, Knead Dough On A Greased Board Using Greased Hands And Knead Until Dough Is Well Worked And Shiny. Let Dough Rest. While Dough Is Resting Use A Little Amount Of Olive Oil To Saute Onion And Garlic Until Clear, Add The Dry Spices And Continue To Sautee Until No More Moisture Appears In Pan, Allow To Cool Slightly, Then Add To The Dough Fold In And Knead Until Well Mixed In. Place Dough Back In Bowl Cover Bowl And Let Dough Rise In A Warm Place For 1 To 1 1/2 Hours. After It Has Doubled In Volume Punch Dough Down And Divide Dough Into 12 Even Sized Pieces. Shape Each Piece Of Dough Into Logs About 4 In. Long By 1 1/2 Inches Wide Place Onto A Greased Cookie Sheet, Cover And Let Rise In Warm Place Until Doubled In Size. Preheat Oven To 350 Degrees. Uncover Cookie Sheets And Place Into Oven. Bake The Rolls For 12 To 15 Minutes Or Until Reaching Medium Light Brown Stage. Remove From Oven And Cool On A Rack. Anyone Walking Into Your House While These Are Rising Or Baking Will Think The Are At A "subway" Shop. They Smell Wonderful And Taste Even Better. And Make A Good Sandwich A Great Sandwich!
