Mexican Beef Melts

Mexican Beef Melts


1 pound ground beef
1 package taco seasoning mix
2/3 cup water
1 1/2 cups thick & chunky salsa, divided
1 can Grands southern style or buttermilk biscuits
1 cup Mexican cheese blend
1 cup sour cream, optional

1. Heat oven to 375. Lightly spray large cookie sheet with cooking
spray In 10" skillet, cook ground beef over medium high heat 5 to 7
minutes, stirring frquently, until thoroughly cooked; drain.

2. Stir in taco seasoning mix, water and 1/2 cup of salsa. Cook 2 to
4 minutes, stirring occasionally, until mixture has thickened.

3. Separate dough into 8 biscuits. Press or roll each into 6" rounds.
Spoon about 1/4 cup beef mixture onto center of each round. Top each
with 1 tablespoon of cheese. Fold dough over filling; press edges
firmly with fork to seal. Place on cookie sheet.

4. Bake 9 to 14 minutes or until golden brown. To serve, top each
sandwich with 1 heaping tablespoon of remaing salsa and 1 tablespoon
remaining cheese. Serve with sour cream.

Makes 8 sandwiches

I am stuffed! I just finished off eating 2 of these along with a helping of Black Beans & Yellow Rice! I loved it my nephews and granddaughter helped (they rolled out the grands) and the older one he sealed the edges, they had fun helping! They are terrific tasting, I can imagine they would pack well in a lunch box, similar to Hot Pockets only much better! My nephew 8 yrs. old ate 3!!! A winner all the way around!

do you add the taco seasoning and stuff to the meat? or stir everything first until the mixture thickens and then add the meat. and what brand of taco seasoing do you use? i've tried the lawry's one..but don't know if thats the best.
 
Cupcake - after the meat has browned you add your taco seasoning, etc.

As far as taco seasoning goes - it's whatever you want - I use my own mix:

1 Tablespoon Flour
1 Teaspoon Chili powder
1 Teaspoon Paprika
3/4 Teaspoon Salt
3/4 Teaspoon Minced onion
1/2 Teaspoon Cumin
1/4 Teaspoon Cayenne pepper
1/4 Teaspoon Garlic powder
1/4 Teaspoon Sugar
1/8 Teaspoon Ground oregano

Combine all of the ingredients in a small bowl. To prepare the
meat filling for the tacos as described on the original package
instructions: "In large skillet, brown 1 pound ground beef until
crumbly; drain fat. Add spices & seasonings and 2/3 cup water; mix
thoroughly. Bring to a boil: reduce heat to low and cook, uncovered,
7 to 10 minutes, stirring occasionally. Spoon meat filling into
warmed taco shells or tortillas. Top with shredded lettuce, grated
cheddar cheese and chopped tomato. Use fresh salsa and guacamole
if desired.

That is for one recipe. I make a large jar of it and keep it in my pantry for other dishes as well.
