Chicken Breasts With Dijon Crust

CHICKEN BREASTS WITH DIJON CRUST
SERVES 6

2 T. Dijon-mustard
2 T. sour cream
1 c. fresh bread crumbs
2 t. chopped fresh thyme
1 t. canola oil
6 boneless, skinless breasts
½ t. sea salt
¼ t. pepper

Adjust oven rack to highest position. Spray baking sheet. Combine mustard and sour cream. Combine crumbs, thyme and oil. Season breasts. Brush mustard on breasts. Dip mustard side into crumbs, pressing firmly onto chicken. Arrange coated side up on baking sheet. Bake.
