Винегрет (Vinegret) - beet and potatoes salad.

Something new for Americans, but pretty typical for Russian festive dinner - it's Vinegret!
I hope you will like this appetizer that is good for you too due to the goodness of red beets.

Ingredients:

3 Potatoes
1 Medium beet
2 Carrots
3 Dill pickles
1/4 Lbs Sauerkraut
1/8 cup Olive oil
Salt to taste

Preparation:

Cook potatoes, carrots and beets in skin, let them cool down, then peel.
Cut in small cubes (about 1/4 inch) all cooked vegetables and pickles, put in mixing bowl.
Add sauerkraut and oil and mix. Taste if you need to add salt.

Serving suggestions:

Can be served with herring, and a shot of vodka.

Do you put this on bread or crackers? Or just eat it straight with a fork or spoon?
 
Just eat it it with the fork.
Not only it's tasty, it's good for you because of goodness of red beets and absence of mayo, we use olive oil instead.

Boy, I tell ya, I love this kind of food, but my stomach hates me for it. It is the Sauerkraut and dill pickles that get me every time. It has basically ended my love affair with a lot of German and Russian foods. Perhaps the vodka is the secret? :)
 
The secret of vodka, Jaffo, is that if you drink enough of it you really don't care if your stomach aches. :D
 
Everything in moderation people, everything in moderation.
A shot of vodka never hurt anybody, it's when you over do it, then you are in trouble.

Yes it is our samovar. Not that we use it for what it is intended to be.
It's electric, 220 volt and the plug is different, so it is basically a decorative item.
The only practical use from it is a picture for the our website - mamasrecipes.net and for this avatar.
 
Dill pickles seem to have a heavy presence in this type of cooking- fortunately! I love me some dill pickles... some (like me) even think they are the necessary but oft-unobserved ingredient to a most delicious beef stroganoff! YUM!
 
Good Sounding recipe!

Kevin you are so right about dill pickles! I use capers alot in many recipes and also chopped green olives, it adds such a neat flavor!
 
We used to make dill pickles ourself "back in the old country", and I guess got too lazy in America, where you can buy everything in the store.
This year we bought some fresh pickles on the market, and decided to make our own dill pickles.
Guess what! It was worth the effort.
 
I prefer my dill pickles super-crunchy like good store-bought garlicky Vlassic Kosher dills, but everytime I've tried making them they come out soft. Is there a secret to making them crisp? I don't mind other types of pickles soft- but I prefer dills to have a CRUNCH!
 
Our came out crunchy. I will post the recipe separately under the same category - appetizers. Hope they will come out crunchy for you too.
