1-1/4 cups quick-cooking rolled oats
1-1/2 cups boiling water
1-1/2 cups all purpose flour
3/4 cup unpacked brown sugar
1/4 cup granualated sugar
1-1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 egg whites
1/4 pur'ee canned peaches without juice
1/4 cup of melted butter/margine
1 teaspoon of vanilla
1/2 cup mini chocolate chips
Preheat oven 325 degrees
Pour boiling water over oats, stir and let stand for 20 minutes
Combine flour and next six (6) ingrediants in a large bowl
In a small bowl compine egg whites, pur'ee peaches, butter and vanilla.. whisk till smooth. Add oats to flour mixture and stir till all ingrediants are wet, and then stir in choc-chips
Put papers in pan.. or non stick spray
Makes 12 delicious muffins.. Great for breaki.. or a after school snack..
