My favorite Chinese meal whats yours

LO MEIN
4 tbsp Peanut oil
2 tsp Cornstarch
1/2 lb Flank steak;or shrimp,chicken
1/2 lb Spaghetti;or chinese/noodles
2 Celery; shredded
1/2 tsp Sugar
2 Sl Ginger; minced
1 tbsp Soy Sauce;light
1 c Cabbage
1/2 tsp Salt; optional
1 Green onion; minced
Cook spaghetti as directed on package, Al dente, drain, rinse in cold
water, add a few drops oil and mix to keep from sticking. Set aside.
Slice steak VERY THIN, across the Grain, 2" pieces. Mix together,
steak, ginger, scallion, cornstarch, Sugar, light soy, set aside to
marinate.
When ready to cook, heat wok to smoking, add 2 tbs oil. Stir-fry Meat
mixture two minutes, do not overcook, Reserve. Add 2 tbs oil, heat,
stir-fry carrots and cabbage two minutes, add spaghetti, stir well and
cook a few minutes, add Meat mixture, 1 tbsp soy and salt. Stir a
minute to heat and serve.
 
I like to cook Chinese food. I think my favorites are red cooked chicken or pork, szechuan chicken, five spice pork fried rice, chicken and broccoli with black bean sauce and spicy stirfried string beans. Yum!
 
My all-time favorite is Cashew Chicken...then...Schezuan anything [pork, beef or chicken or shrimp it matters not] I love the sauce! That Lo-mein recipe looks good and simple too I must give it a try! But I do love Chinese food, mostly from a restaurant. When I make it it tends to loose some authenticity in the taste do not ask me why. Maybe I cook so much it is nice to occassionally have someone else do the chore!
 
Cook Chatty Cathy: do you ever put in the MSG? this is what makes the difference in Chinese food.

My favorite is the Duck in Hoi Sin Sauce - I wish I know how to make it, but I would probably just end up getting fat! :-D
 
Ygmet I do not add MSG, but I'll bet you are "right on" and the MSG giving it that authentic taste kicker I miss out on when I prepare homemade Chinese:)

Ok, I'm sure this is no surprise;) My favorite is Broccoli with Shrimp in a white sauce served over white rice.

I never use MSG when making Chinese food but I do use powdered kelp. MSG is made from kelp only it's extremely processed. you can get a similar umami quality with just plain powdered kelp.
 
Mikaty, you posted my favorite. I love noodles and some good egg rolls.
 
EGG ROLLS
1 lb. chinese cabbage (Napa)
2 stalks celery
1/2 lb. cooked shrimp
1/2 lb. cooked pork, chicken livers or chicken (finely chopped)
10 water chestnuts
1/3 c bamboo shoots
1 tsp. salt
1 tsp. sugar
Liberal dash pepper
1/2 tsp. light soy sauce
1/4 tsp. sesame oil
1 beaten egg
10 egg roll skins
3 cups oil
PREPARATION: Boil cabbage and celery until very tender. Drain and
squeeze out excess water. Shred very fine and set aside to
drain further. Par-boil shrimp and fry or bake pork. Mince both.
Shred water chestnuts and bamboo shoots. Mix all ingredients but egg
together. Beat egg. Wrap filling in egg roll skins and seal with egg.
COOKING: Heat oil in wok or deep fat fryer to 375 degrees and drop
in egg rolls. When skin turns light golden brown, remove from oil and
drain (refrigerate them and finish the cooking process when needed).
When cool, drop again into hot oil and fry until golden brown.
 
MSG may not be good for everyone. There are some sensitivities but nothing has been proven that it is bad for everyone. Specifically not in natural sources such as soy sauce or seaweed unless you are allergic to the ingredients in them. I think MSG is bad for people the way "enriched" wheat flour and high fructose corn syrup is bad for people. It's processed beyond recognition of anything natural.
