PINEAPPLE AND COCONUT PIE
3 eggs
2/3 cup karo or corn syrup
1 cup sugar
2 tbls butter
1 cup chopped pecans
1 small can crushed pineapple (drained)
1 cup angel flake coconut
1/2 cup buttermilk
1 tsp vanilla
a pinch of salt
1 uncooked pie shell (I used a deep dish pie plate for baking)
Combine eggs, karo, sugar, and butter together. Beat with a wisk until fluffly and bits of butter are floating on top of mixture. Wisk in remaining ingredients and pour into pie shell. Bake at 350 for 45 min-1 hr. and golden brown on top
