Blueberry Mini Muffins

Blueberry Mini Muffins

Yield: 36 Servings

2 c Flour
1/2 c Sugar
3 ts Baking powder
1/2 ts Cinnamon
1/8 ts Salt
1 Egg
3/4 c Milk
1/3 c Oil
1 ts Vanilla
1 c Fresh or frozen blueberries; do not thaw

Preheat oven to 400°.

Combine dry ingredients. Combine wet ingredients.
Mix just until wet. Fold in berries. Put into 36
sprayed mini muffin cups.

Bake 10-15 minutes until light golden brown and
test clean. Remove immediately from pan.
 
I just read a tip somewhere about how not to turn your batter blue from adding blueberries, but I've forgotten it! I think it was use frozen blueberries and don't stir. Anyhoo.
 
I love blueberry muffins - and I don't care if the batter is blue! Just like them anyway!! I just bought a bunch and cleaned and froze them - I toss them frozen right in my cereal or on ice cream - I love blueberries!! Take me blueberry picking and instead of weighing what I picked - weigh me in and out! LOL

Use frozen blueberries, and before you add them, dredge in a little flour.

That's what I do with the famous blueberry pound cake.
 
I love blueberry muffins, and breads, I just don't know how to bake them. So I just buy at French Baker hehe.
