Couscous and Smoked Turkey Salad

In 3-quart saucepan, heat 1 tsp. cumin over med-high heat until fragrant, 1-3 minutes. In saucepan with cumin, prepare a 10-oz. package of couscous as label directs, adding 1/3 cup raisins but no salt or butter. In large bowl, with wire whisk or fork, mix 3 tbs. lemon juice, 2 tbs. olive oil, 1 tbs. mustard, 3/4 tsp. salt and 1/4 tsp. pepper until dressing is blended. Toss warm couscous mixture, 3 diced medium-sized ripe nectarines, and 4 oz. chopped smoked turkey breast with dressing. Spoon couscous into serving bowls lined with Boston lettuce leaves.
